Left over Apple & Strawberry cheesecake


 

Using bits we had in the kitchen including a packet of okkish! pepper pig biscuits I pulled together this little stunner!!! You can use any substitutes you have at home The idea is to have fun with what you already have

Makes 4 healthy portions

INGREDIENTS

4 - 6 Strawberries

Cut in 8

365 Apple pie filling

Put 15g aside for topping

200g Soft cheese

whipped

150g Shortbread biscuits

Crushed

15g Butter

Melted

In a clean bowl, whip the cream cheese until smooth. Add the apple pie filling then combine. If you'd prefer your mix to be sweeter, one tablespoon of caster sugar can also be added. Put your bowl in the fridge until later.

Combine your melted butter and crushed biscuits in a separate bowl, until your left with a slightly moist crumble. Evenly separate the mix between your 4 serving dishes, using the curved side of a spoon. Push your mix to the bottom of your dish, covering the entire base. Once you've completed all four, put them in the fridge for 20 - 30 minutes.

Once your based has set (please leave your base in the fridge longer if necessary). You can evenly separate the cheesecake mixture among your serving dishes. I then decorated each cheesecake with the 15g of filling put aside and strawberries.
